Cookies!!!

Made some chocolate chip cookies just now, and boy, can I make a DAMN good cookie!
A couple of weeks ago Mike brought home some store bought chocolate chip cookies, and I fussed at him about it. It's no more trouble to make them than to buy them, and I told him all he has to do if he's wanting cookies is buy a bag of chips, come home, and announce "I'd like some cookies, please!"
I use Ghirardelli semi-sweet chocolate chips, real vanilla extract (this fancy gourmet stuff that is actually cheaper than the McCormick and store brand stuff, and is so strong you have to use half what the recipe calls for), real butter, and unbleached bread flour. I also line the pans with parchment paper so they don't stick and so I can put another batch right in, just slide off the baked batch and put a new sheet in the pan, dollop out the cookies, and put 'em in the oven.
Then I watch them like a hawk. Halfway through cooking time I swap the pans side to side and end for end, so they'll cook evenly. The package says it makes 4 dozen, but I generally get between 5 and 6 dozen out of a batch, and they're a good sized cookie. I don't know, maybe the recipe wants you to use a quarter cup for each cookie.
Then I take them out and watch my husband and son devour them. I generally eat a few, but they're too sweet and I'll get sick if I eat more than a couple.
I swear, it's more fun making them than eating them. And they make the house smell soooooo good.
