I made these yesterday, very tasty and low calorie. Filling, too!! It made enough for 6 fajitas.

Lorri's Chicken Fajitas

1 1/2 to 2 lb boneless skinless chicken breast, cut in strips
1 green pepper, cut in strips
1 onion, cut in half then sliced
1 package yellow rice (OMIT the margarine)
Flour tortillas

Marinade:

2 T lime juice
2 T olive oil
2 t taco seasoning
1 garlic clove, diced

Cut the chicken up, and put in a Ziploc bag with all the marinade ingredients. Squish it all around to coat the chicken, then put in the refrigerator for at least 6 hours or overnight if possible.

To cook:

Fix rice according to package directions, keep warm.

Pour the chicken and marinade into a hot skillet, and cook over med-high heat until chicken is done and coating starts to brown slightly. All the liquid will be cooked away, takes about 10 - 15 min.

Remove chicken from pan, add vegetables and about a teaspoon of olive oil. Stir fry the vegetables until they are just tender -- the pepper will still be crunchy and the onions will have started to caramelize. Add chicken back in, toss everything around until it's all hot.

Serve with warm torillas, cheese, salsa, and your other favorite add-ons.

One fajita (tortilla, chicken, veggies, 1 T rice, and salsa) is about 280 calories.
