The Best Damn Banana Bread In The World

Ingredients
* 1 2/3 cups all-purpose flour
* 1 teaspoon baking soda
* 1/4 teaspoon ground cinnamon
* 1/2 teaspoon salt
* 1 cup plus 2 tablespoons sugar
* 2 eggs
* 1/2 cup oil
* 3 1/2 bananas, very ripe, mashed
* 2 tablespoons creme fraiche, sour cream, or vanilla ice cream
* 1 teaspoon vanilla extract
* 2/3 cup walnuts or pecans, toasted and chopped
Directions
Set oven to 350 degrees F. Line the bottom of a loaf pan with parchment paper.
Sift together the flour, baking soda, cinnamon and salt. Beat sugar and eggs with a whisk until light and fluffy, about 10 minutes, or with a mixer about 4 minutes. Drizzle in oil. Add mashed bananas, creme fraiche, and vanilla. Fold in dry ingredients and nuts. Pour into a lined loaf pan and bake for about 1 hour to 1 hr 15 min.

Flour Bakery and Cafe is a Boston restaurant, and I have to say this is the best banana nut bread I've ever put in my mouth. You can lower the calories by reducing the oil to 1/4 cup and adding 1/4 cup applesauce.
I didn't have any creme fraiche or sour cream, but I did have Breyer's French Vanilla ice cream, so I used 2 tablespoons of that. Also cut the vanilla in half, because I use Rodelle's vanilla, which is much stronger and tastier. I used chopped pecans because I had those in the freezer.
The recipe originally said bake for 45 min to an hour, but it was still liquidy in the middle at 1 hour. The extra 15 min gave a moist crumb and a delicious brown crust.
This bread is moist, delectable, and you don't have to get a big ol' slice in order to feel satisfied. You can cut back on the amount of banana you put in, but really, if you don't want a pronounced banana taste, why in the heck are you making banana bread?
